Green Fields and the Big Eds are two of these small batch artisan styles. Green Fields is a semi-soft, earthy and elegant table cheese, while Big Eds is a clean-rind cheese that is aged 120 days. Both pair well with fruits, meats and a variety of wines that include Reisling and Pinot Grigio.

PINE RIVER PACKS GARDEN FLAVOR INTO NEW CHEDDAR SPREAD Summer '08|Vol. 14, No. 4 Pine River has been creating award-winning cheese spreads since 1963, and the company's new addition, Garden Vegetable Cold Pack, seems likely to carry on the tradition. Pine River blends cuts of Grade A Natural Cheddar, aged nine months, with cream and other dairy ingredients and processes until smooth without using any heat. Garlic, onion, tomato, bell peppers and parsley are added to this rich Cheddar spread to create a full-flavored blend. Similar to the company's other cheeses, the Italian-style Gorgonzola is based on an old-world European recipe and is carefully crafted in small batches. This Italian-style cheese is a creamy, green-veined cheese made from whole milk with a specially selected mold that creates a subtle but satisfying flavor.
